The other day I heard my mother-in-law, who was visiting, yell at some corporate bigwig on the evening news to a€?Give us our money back!a€? Like many of us, shea€™s thinking about her finances these days.
These meals are so affordable, in part, for the same reason that theya€™re so good for you: we dona€™t overdo it on meat. I’ve given you three choices of recipes using chicken, turkey, beef, pork, seafood and vegetarian.

When we include meat or fish in our recipes, we recommend a reasonable-size portion of 3 to 4 ounces per serving.
