I have been making this recipe for years and its one of my favorites.  Plus its so easy !!!!
I couldn’t get the butt to fit in my crockpot, so I put it in a big pot and cooked at 350° for 4 hours, then added the potatoes (peeled and cut up) and cooked on the stove until tender. I normally separate the scones from each other on the tray and pop them back in the oven for an extra minute or two to make sure the joining edges are properly cooked.

Should the bottom be baked all the way through when it comes out…mine is still rather liquidy…should it have a cornbread texture? I thank you for all your great recipes and many times I take your recipes and make them my own.


Amanda, LaaLoosh is right… there are so many versions of this recipe, going back to the 80s when my mom would make it for me!
This basic scone recipe uses only 4 ingredients and makes scones with a lovely light yet moist texture. A base of cornbread mixed with corn, green chilies and fresh jalapenos, topped with shredded chicken, enchilada sauce and cheese, come together to put a tamale into casserole form for just 6 Points + per serving. I just use the egg beaters instead of actual eggs because it eliminates extra fat and cholesterol. Do not knead the dough heavily, but using floured hands, knead once or twice while shaping the dough so that it is about an inch (2.5cm) high and roughly round in shape.
Using your hands, re-shape the left-over bits of dough and then finish cutting out the rest of your scones.
And at just 6 Points + per serving, it’s a Weight Watchers dinner recipe that tastes too good to be true. And as for the Tamale Casserole Recipe, there are TONS of them online…and they all are very similar. This was so good, and so satisfying…it was a great Weight Watchers Dinner Recipe that the whole family could enjoy.
That being said, I looked at the one on Emily Bites and it is identical to the one on Cooking Light, so…yeah. If you like Emily Bites site so much maybe you should stick with getting your cooking inspiration from their and stop trolling Laaloosh.


I am glad to have a place to come find lighten versions of recipes that actually taste good.
We had them roll the biscuits into balls and then roll them through the butter mix and then the sugar mix. Some of the biscuits didn’t get the coating on the inside, but there was AMPLE coating to spread over after you serve them.
Dip several pieces of dough into the butter then into the sugar mixture coating pieces well then place in pan. Continue coating pieces of dough into the butter then sugar mixture until all are coated and placed in the pan. If you have any sugar mixture or butter left over, mix them both together and then sprinkle over the top.
For a variation you could chop some apples and maybe some raisins , dip dough in butter, sugar mixture, then apples or raisins or both then put in pan.
