I came up with this coconut nests recipe at work one Easter (I have a wonderful job that includes baking cakes for a local tea rooms :-)), it's a simple mixture of desiccated coconut, condensed milk and vanilla extract (yes it's really THAT simple). It's then moulded into shape and cooked in the oven for 10 minutes.The original recipe belongs to Sue, a very talented baker who I work with, she's been in the baking business her whole life and knows her stuff. Once they've cooled down (which doesn't take longer than 30 minutes) you can fill them with something chocolatly!
They looked great as part of our Easter cake selection, along with my speckled Easter Chocolate Cake.
