In the small town where I grew up, there was a little sandwich shop that served everything on homemade Dutch Crunch Rolls (aka Tiger Bread) and it was my favorite!
I used chia seeds instead of the psyilium husk. You were right eventhough I put the wrong measurement of tapioca flour. By Erika 7 Comments Going Gluten Free was hard enough, so when we found out a couple of years ago that one of my sons was (also) allergic to eggs, I cried…  and after a good cry, I sucked it up, strapped on my apron, and slowly began re-working almost all of our favorite recipes to be both Gluten Free AND Vegan. If you’re looking for my original Gluten Free Pie Crust Recipe, it can be found here. I’m a big Gilmore Girls fan, but nothing bums me out more on that show than when Lorelai and Rory order pizza. I’ve tried every recipe, every method and every possible way to make a gluten-free alternative, most with great disappointment.
I’m a serious traditionalist when it comes to pizza, and favor tomato sauce and mozzarella as my toppings. There’s an exclamation point in the title of this recipe because one of the things celiacs miss most is really good pizza. In the bowl of a stand mixer, combine the brown rice flour, white rice flour, sweet rice flour, potato starch, xanthan gum and salt. While dough is rising and oven preheating, combine all the ingredients for the sauce in a medium saucepan and bring to a simmer. Leaving the pan or pizza stone in the oven, remove the crust from oven and discard parchment.

Place pizza directly onto baking stone or pizza pan in oven and bake for an additional 6 minutes.
NOTE: If not rolling out both pizza crusts at the same time, wrap the second dough ball in plastic wrap and refrigerate for up to 2 days. Healthy No Bake Gingerbread Latte Bites recipe- Quick, easy and delicious, these bites are doughy and taste like a Gingerbread latte minus all the sugar and fat! Raw Gingerbread Cookie Recipe (Vegan,Gluten-Free) - Perfect delicious treat for staying healthy during the holidays. Healthy 1 Minute Double Chocolate Muffin made with NO butter, NO oil, NO flour and NO sugar but you'd never tell! Diagnosed with celiac just as the show went into syndication (and the weekend marathon watching commenced), I still get super-sad when the gals of Stars Hollow try to save a bad day by ordering pizza — something I’ll never be able to do again. Lots of places make gluten-free pizza, but they don’t use separate prep and cooking areas, and cross-contamination is a risk not worth taking.
Cover top of mixing bowl with a clean dishcloth and let the dough rest in a warm spot for 30 minutes. Stir to incorporate all ingredients, then reduce heat to lowest setting or remove from heat until ready to use on pizza crust.
If going with the red sauce and mozzarella version, top with 1 cup of sauce and shredded mozzarella. This crisp-but-not-crackery crust is substantial enough to hold all the toppings you want to load on there, but it’s not thick, cakey or gross.

I do this right on the stove top while the oven is preheating.Prepare a water bath by placing water in a baking dish and placing it on one of the lower racks in the oven while it preheats. This crust is thin and chewy with just the right amount of crisp around the edges, and the perfect balance of crunch, salt and yeasty goodness. A thin layer of the dough will likely stick to the layer of parchment you’re peeling off. If your mixture still seems dry or doesn't stick together when pressed, then add more water 1 Tablespoon at a time. Lightly dust a sheet of wax or parchment paper with a little extra flour or tapioca starch. Place a second piece of parchment over the top and roll the dough out until it matches your pan size. Carefully slide your hand under the wax paper and gently flip over the crust into the pie pan. Prick bottom of crust with a fork & place pie crust in the fridge until you are ready to use it. That's ok, this recipe works with or without it (in fact the photos were taken of a batch I made without it).
