April 20, 2014 by Jenn Land · 23 Comments Packing school lunches can be a daunting task. No matter what you decide to prepare, always make sure to include plenty of good fruit and vegetable choices that are easy to eat.
I also like to include sides like yogurt, cheese sticks, dill pickle spears, applesauce cups, pudding, gelatin, and even homemade baked treats as a little dessert. It’s important to include a yummy drink that kids will enjoy so they can stay hydrated for their busy day. Sometimes, you just want to think outside of the box and go for something that just isn’t a sandwich! Not every item on this list is going to be a winner with your child, but I hope it inspires you to step out of your comfort zone to experiment with new, easy ideas for packing school lunches. In this lunch, I slightly adapted our chicken salad recipe by just using Earth Balance Mindful Mayo to mix it up.
For myself, I mixed it up by packing my tuna salad with romaine leaves instead to eat it with. Just because Little Miss can't have the store bought "Lunchables" (not that they're very healthy - bleh!


By packing up the leftovers while I was cleaning up supper, it made lunches a breeze for the next day! I eat salads often for lunch, so to keep them "interesting" so I don't get bored with eating them, I love to mix up the colorful toppings. Once again utilizing leftovers, Little Miss has gluten free & allergy friendly alphabet pasta leftovers packed in her thermos. Forget the bread and roll-up deli meat slices around a cheese stick, if you can handle the dairy.
Here she has a salami heart shaped sammie on Udi's GF bread, grape hearts, heart shaped watermelon cut outs, tortilla chips, and a salad. I colored a mustache face with a food safe marker on her hard boiled egg and packed it with watermelon and carrots on the side. Leftover chicken breasts are great for dicing up for chicken salad or even topping on salads for lunches. We homeschool, but we do manage to go to activities once or twice a week where we have to pack up and go. I am always struggling in the morning with what to pack for my kindergartner I love all of the non sandwich ideas, thanks!
Only three ingredients that are great for snacking, topping on salads, or packed for lunch. Here I made Little Miss a pizza roll-up by filling it with sauce, cheese, and pepperoni slices for lunch.
Here I made myself a turkey, spinach, honey mustard, and non-dairy cheese shred quesadilla.


Here we've packed half a sandwich on Udi's gluten, dairy, nut, & soy free Cinnamon Raisin bread. Here I used an Udi's gluten free bagel to quickly toast Little Miss a pizza bagel for lunch. On this GF bagel sandwich, it's filled with romaine, turkey, honey mustard, shredded carrots, and shredded zucchini. Place the chicken, greens and tomatoes in a large serving bowl and pour vinaigrette over top. Many of our recipes and posts are free from the Top 8 Allergens or list substitutions otherwise.
Here she has a "Homemade Lunchable" by packing Ener-G brand Table Crackers, lunch meat roll-ups, fruit, and a carrot in her Goodbyn Bynto lunch box. Paired with a side salad, grapes, cherries, & watermelon for a perfectly filling lunch combo.
I used to wonder how to create a packed lunch for kids, but I’ve been experimenting and came up with a huge master list that I pull from depending on what we have on hand. Also packed are grapes, sweet potato chips, carrots, an apple, and a reusable pouch of applesauce for snack later in the day.
