School, here, doesn’t start for another 3 weeks, but most of us have been at school this week already!

I hope lots of teachers out there will be enjoying the fruits of these “survival kits” over the next few weeks! Baby kale, baby spinach, and chard make a perfect delicate combo for this sesame chicken salad. Adding a touch of low-fat cream cheese turns this soup into a creamy concoction without adding a lot of calories. It’s a fun but exhausting week, and I think just about every teacher out there would appreciate some caffeine and chocolate to power through it. Too lazy and in a hurry to chop fresh garlic so I used Trader Joe’s frozen garlic cubes. My mom is from Germany and made spaetzle all the time while I was growing up, so that’s one of my favorite things to eat, ever. I tend to add extra garlic instead when a recipe calls for onions (is it weird that I simultaneously love garlic and hate onions?). Anyway, I apologize for my inconvenient food aversion, but all of that is to say…I realize that beef stroganoff typically includes onions. Also, in lieu of egg noodles I am making my Peppered Spaetzel which just adds the layers of flavors!
So if you are an onion fan, by all means, feel free to chop up an onion and add it to the slow cooker with the mushrooms.
