When you share about storing in fridge, are you talking about the entire cake or just the frosting???

This cake can be served drizzled with the sugarfree maple syrup and topped with sliced almonds. That looks so decadently amazing and easy to do but delicious without compromises but one flour, which we can do without anyway. Yes, the “cake” is in quotes because while this looks like a cake on the outside, once you cut into it you realize that this is a big hunk of juicy watermelon frosted with whipped coconut cream.
I first saw an image of this watermelon cake recipe online a few months ago , and knew I wanted to try my hand at a version once summer rolled around. Far lighter and more subtly sweet than your average store-bought cake, this delicate, melt-in-your-mouth sponge is a more balanced complement to strawberries and other spring fruits. Lightly butter the inside of a round cake pan, then coat with flour and tap out any excess flour.
Still in the warm water bath, use an electric mixer set on low to beat the eggs while adding the sugar in two or three portions, allowing sugar to mix well before adding more. When the mixture has warmed to about body temperature, remove the bowl from the water bath.


Sift one half of the flour and corn starch mixture into the bowl from as high above the bowl as you can.
Immediately after removing from the oven, hold the cake pan right side up about 20cm (8") above a table, and drop it so it lands flat; this will prevent the cake from falling. As with most confections, the ingredients used should be measured precisely; use a scale if at all possible. In place of a warm water bath, you can put the bowl over a pot of boiling water and let the steam warm it, but be sure not to let the boiling water touch the bowl with the eggs.

I didn’t have time to take a picture of the cake at home…so I took one at camp! Combine coconut flour, arrowroot, almond flour, cacao, baking soda, salt and baking powder in a bowl and whisk to combine. Add honey, eggs, coconut oil or melted butter, almond milk, lemon juice and vanilla to the dry ingredients and mix well. My husband likes to eat it cold when the frosting is hard and I prefer it room temperature when the frosting is soft.
Prepare pan by greasing bottom, lining with parchment paper and then greasing parchment paper.
If I were to make this using honey, can I just sub in an equal amount of honey in place of the syrup? They are cute and delicious, and they give you something to do with any leftover cake scraps you might have.
This recipe is not only fruit rich, but it also works as a gluten-free, wheat-free, egg-free dessert as well as  satisfying a host other dietary needs.
I used one of those whole, round seedless watermelons as they give you a good cake-like dimension from the get-go. Use a sharp knife to trim away all of the green and white rind, leaving you with just the pretty pink flesh. And while I have no problem designing a cake with a female design (the flower options are endless) it is not quite as easy for a male cake.


I will post the recipe for one 8″ round cake pan, but you can double it for two cakes or triple it for three! You could also skip the frosting and serve with berries or Vanilla Coconut Cream Ice Cream. I was going  to use Splenda (my sister is watching her sugar intake) but decided to use this syrup which is closer to the consistency of honey, in case it makes a difference how the cake will turn out. The instructions are on the box, since this is the easy recipe In the mixing bowl, mangle that cake.
The piped chocolate buttercream shell border as well as the rosettes are highlighted with golden sugar pearls. I find that designs incorporating the pure color of chocolate is one of the best ways for a simpler male birthday cake. Dump some (not all!) of the frosting in with the cake and mix it up. There are other methods of making them, like using a cake pop maker, but this particular recipe is for the original type using scraps and frosting.
Dry off your work surface and pat down the watermelon “cake” thoroughly with as many paper towels as it takes to soak up any surface liquid. It’s also the most easy cake pop recipe because it uses cake scraps you already have, or boxed cake mix, and canned pre-made frosting instead of homemade ingredients. If you can't form the whole thing into a ball that holds its shape you may have gone a bit too far with the frosting. Add confectioners’ sugar and vanilla and continue to beat until peaks are almost stiff, but still creamy. You're not cooking it here, just melting it so go easy on the timing. Pull out your cake pops, dip them in the chocolate so they're completely covered. Hold them for a moment until the excess has dripped off, and then dip them or cover them in sprinkles. Poke them into your styrofoam or set them in your cake pop holder, and put them back in the fridge to freeze overnight. Press coconut chips along the bottom half of your “cake”, then decorate with fruit as shown, or in any decorative design that you like. You can also set them back on the cookie sheet, but you will get weird flat-topped cake pops. May be refrigerated for up to 30 minutes, but no longer, and you do run the risk of the fruit and frosting sliding down off of the “cake”.
