What happens when you combine high-protein foods like eggs and a high-?ber vegetable like zucchini? I have a round zucchini that is quite large 21 inches round, I want to try your recipe but it will serve 2.
Ya know, I just quartered it and it tasted like zucchini, except the skin was really tough. These golden, crisp zucchini cakes make a great side dish, but I often serve them as a main dish, with brown rice and roasted carrots.

This looks fantastic and we have zucchini growing in the garden so perfect inspiration to put them to good use! Always lots of great veggies in the summer time especially Zucchini which is one of my favorites.

I love the combination of flavours, I hadn’t thought of combining zucchini and green chili! They make a great side dish or would be great to eat just by themselves if you are good with just eating veggies for dinner.
We did half of them with Plain Panko Bread crumbs and then the other half with Italian Seasoned Panko Bread Crumbs – both were delicious.
The eggs’ high protein and good cholesterol content (contrary to the rumors, the yolk is not that bad) provides healthy amount of energy for a busy day or a grueling workout session.
Our garden has zucchini that’s ready for me to pick so, this will be on my To-Make List! These Zucchini Parmesan Crispy Chips are one we found and tried tonight and it was worthy of a share with you all. If you have any mixture left over just sprinkle the remaining amount on the top of your slices.


My daughter and I were just talking about getting more veggies on our diet and I came accross your zucchini chips.
The fiber and manganese in zucchini keeps digestive and physiological functions in best shape. When hot, after about 3 minutes, drop ¼ cup of the batter onto 4 spots on each skillet (mine are pretty and round because I used a round, shallow measuring cup to scoop the mixture out).
Repeat with 2 more batches, wiping the skillets with paper towels and adding more oil as needed. Place zucchini tops on top.  Add a splash of olive oil in a baking dish and add zucchini rounds.
