Some restaurants on Marin Organic or OM Organics are 5% organic and some are 95% organic, there is no way to know unless restaurants are willing to share with customers what is and what isn't organic or GMO.
They do use rice bran oil, instead of gmo canola oil in the fryer last I checked, and they use Strass Organic dairy for their milkshakes, but not sure about the sugar. With multiple restaurants, cookbooks and a thriving catering business, Cool has been a local pioneer in the sustainable foods movement.

It just means you have the best chance of avoiding most GMOs if you eat at these restaurants in comparison to other restaurants. Everything is local, but you need to be careful when ordering as there is a lot of organic items, but they also carry GMO items as well.
Milk and cream is from Strauss organic and non GMO dairy, butter is from Sierra Nevada Cheese Company.
Dairy for milkshake is organic and from Strauss which is non GMO certified, they use Rice Bran oil in their fryers. Flea Street Cafe, like all of Cool’s business ventures, is entirely devoted to locally sourced, sustainable, organic ingredients. Much of the fresh produce used in the restaurant comes from the North Bay’s Green Gulch Farm. San Francisco-based CCS Architecture designed both the original restaurant at the Marina as well as a new one located at Pier 3 that was renovated from 1900s historic warehouses. The vibrant green flooring is made out of coconut shells, while daylighting, composting, recycled or biodegradable take out containers and energy efficient lighting are also big parts of the restaurant.


And to top it all off, the very talented Flora Grubb designed a beautiful living wall installation out of air plants for the back wall of the restaurant. Reading this article reminded me of the Green Restaurant Association, a non profit that certifies restaurants as Green Restaurants and provides consumers with all the details of the restaurants environmental practices.
The owners of the restaurant wanted a new space to reflect their sustainable ideals as well as to provide a hip, green space for people to enjoy good food. They use Straus certified organic and non gmo verified dairiy, best dairy in the area in my opinion.
