If you're not using an ice cream maker, then pour the mixture into a large bowl and place into the freezer. They need a few minutes to thaw to be at their creamy best but will not fail to satisfy a sweet tooth when you’re ready.
Use a 1 tablespoon sized cookie scoop to drop the ice cream truffles onto a lined baking tray. I use my half sheet sized Silpat for this, but I think parchment paper would probably also work fine here.
