I’m kind of lazy when it comes to smoothies, I buy the family packs of Yoplait or Jamba Smoothies they have in the grocery store for days when I need a quick breakfast.

This months menu has many vegetarian choices, including Meatless Monday’s.  This is a great way to save a few bucks each month on your grocery bill, and it’s good for you! Also, taking advantage of your crockpot, and making things in big batches makes a difference too, and helps for quick week night meals.  And, having a couple meals a week without meat saves you a fortune!
I shopped my usual stores, Sprouts, King Soopers, Albertsons and Safeway to get the best deals this month. I didn’t include any meals for Thanksgiving or the two days after, because I am sure you’ll be up to your chin in turkey, and stuffing and soups and vegetables.  Use the leftovers in a creative way, and make soups, and salads, and even funky sandwiches. Join me as I share a modern-twist on classic comfort food, kid-friendly recipes and no-repeat menu plans that are designed to keep both your stomach and your wallet full! I have some of the recipes posted on my website, but some of the recipes are from a menu planning guide I am putting together and haven’t made it to my website yet.
It has been just over one month since I posted my first blog about my nutritionist designed IBS Healthy Meal Plan and I wanted to give you all an update on how it has been going – with new recipes and pictures of course! You all know it is so important to me to always be honest with you so, I won’t sugarcoat it.
As soon as the Christmas treats started to come out in full force at the office, temptation was everywhere.

Keith and I have also come up with a bit of a solution to lessen the amount of bad food around the house.
I love cooking things that take longer on Sunday since I usually can plan ahead on Saturday. I’m expecting Monday to be a challenge since it will be my first work day back post-holidays. Saturday is a good day for cooking, but I also have to balance that with wanting to be productive. I was hesitant to post breakfasts above because I a) have been struggling to wake up early enough to cook and eat breakfast (I usually grab a bar on the way out) and b) usually prepare something based on how much time I have and what I feel like eating. I'm Diana - a clean eating locavore, 9-to-5 career gal, recipe developer, photography enthusiast, fashion lover, Zumba instructor, & corgi fan with a mega sweet tooth. Whether you're a new visitor or a frequent reader of The Chic Life, I appreciate you spending some time with me here in my little space on the blogosphere. Our family has been greatly blessed by this blog and I pray that God uses it to bless your family as well. This last month has been hard – especially in the build-up to Christmas and over the holidays. Not gonna lie, I’ve been staying up a little too late and sleeping in a little too much.
Sometimes I spend more time getting stuff done and don’t want to use a lot of time for food prep or cooking.
I love seeing your comments and emails pop-up on my computer, and even if I can't reply to your comment, I want you to know that I appreciate you taking the time to leave me a little note. Occasionally I receive products in exchange for a review or giveaway post. However, all opinions expressed on Confessions of a Homeschooler are solely my own, and I only suggest products or services that I believe will be helpful to my readers.
The meals on this plan take a lot of time to prep, especially since I need to make everything from scratch and recipes done in the slow cooker require some extra planning ahead. I was able to get back on track until Christmas, but some chocolate presents proved to be more than I could resist and I once again got off course. For example, even though I am not allowed to eat chips, I am not tempted when he is eating the Jalapeno flavour kind!

I am filming a weight loss update video this week to show you all updated pictures, but the difference is insane! I’m also planning to share my meal plan in advance in case anyone else wants some meal inspiration for the week ahead. I like to keep things around that are easy to make, so I usually have a few options every day. It sounds like you’ll enjoy some delicious meals and snacks that are all pretty low stress.

Do you ever run into days where your family doesn’t feel like eating what is planned? Talk about them when you sit at home and when you walk along the road, when you lie down and when you get up.
I also found out in my second appointment with Jumanah (the nutritionist from Earth Suit Nutrition) that alcohol was off limits as well, so that means no wine and no beer which has been a big adjustment  to make – I am a big fan of my wine! I also have lots of great teas at my desk, which I’m hoping will replace my Starbucks trips. I usually make plenty of extras so I can take leftovers for lunch the next day and I LOVE green smoothies for breakfast. I realized I was taking for granted how good I was starting to feel and that those treats were not just not worth it. One of my favorite things to do lately is get basics (frozen mixed veggies, frozen brown rice, canned beans) and jarred sauces (marinara, curry sauces, salsas, etc) and cook one protein for the week and mix and match things around.
