The slow simmering of bones in water allows for all the minerals that are trapped within the bones to be broken down and released into the water along with the bone marrow. Bone broths are easy to make and freeze very well either in small plastic containers, ice cube trays or in Ziploc bags. Place the roasted bones in a large stock pot and add cold water that rises about two inches above the bones.
Add onions, carrots, celery, fresh thyme, black peppercorns and parsley to the pot and keep simmering until the bones, if chicken, are stripped clean or if beef, when all the marrow has been melted out from the middle. To make a broth with more of a Thai flavor, add ginger, garlic, lemongrass chilies and kaffir lime leaf. These broths can be used as a delicious base for a soup, a great addition to stews or can just be enjoyed on their own as a warm and nourishing drink.
