I skimp on the cheese on top of my enchiladas too…not cuz I WANT to, cuz I have to…lol Hey, the lettuce helps cover up the small amount of cheese!
NOTE: Keep the left over shredded lettuce fresh by placing it in the refrigerator in a ziplock bag with a paper towel to absorb excess moisture.
